Poached Egg Muffins

A  wonderfully  quick and  enjoyable  breakfast  for 4

I  had just enough ingredients for 4 closed and 4 open faced  sandwiches..
The ham was on sale at  Food Lion's  deli  for $4.99 a pound  and  was  very tasty  with just the  slightest  rim of  baked  fat on the edge, giving it a home baked  flavor...  a half slice of American cheese   and  a  delicious poached egg  together with toasted English muffins!  Who needs a McDonalds!
 Now that I have learned the secret to poaching.. it works everytime!
3 fingers of water  and 2 T of white vinegar in my large skillet  that has been  sprayed with PAM...  turned up to  med high  when the water is just prior to boiling  slip  the eggs in .. As the eggs  just begin to cook  I  easily  slide my  pancake turned  under each one to  keep them   suspended in the water..    Lynn likes his  cooked hard so I gently flip his over in the water  for a bit of extra cooking  .   I remove them from the water with a wire basket spoon  to drain    completely and  they are  perfect every time!!!

Foodie Friday

  I posted about this previously this week  but the post was corrupted so I had to delete it for it was  messing up my margins....   today is the day!
   The  birthday  party for  my dad, daughter and  moi! 
  it will be so wonderful to have us all in the house again...  Our daughter lives in Boston  so  she hasnt been  home since the holidays..

I found this  source for  the recipe and   they are marinating now in the fridge!
It looks like a  wonderful recipe and  it makes  an ample   amount to  saturate and infuse its deliciousness  into every morsel!

I did  make a bit of a change on the dressing...
I used 3/4 cup mayo and  1/2 c sweetener
and 3 slight  T. white vinegar .  I also didnt  have cheddar so I used grated swiss... which  is a lighter  version!
This salad is a family favorite!
My next veggie dish is  another salad...

Summer Braised Beef and Rice



The Friday Foodie  hosted at Rattlebridge Farm     serves up  everything about food on Fridays, and I   wanted to share a bit of  supper  we  had last night that  we both enjoyed  so much....  and it was so simple...   Every  month I purchase    lean  beef cubes  cut up for stew  to keep in the freezer   and  so after I had thawed it, I  did as  always...  braised (stewed it in  about 4 fingers of water  slowly over low heat  for  about 3 hours  with  an envelop of  dried onion soup  to season it...  this  then has always  been  the base for  a vegetable  pot or  a soup,,  but last night  I had  recently seen on The Cooking Guy show    how he  had  sauted  some  chopped   green onion along with a a few slices of fresh ginger, and  a couple of  cloves of garlic,,, and I  have been raising   fresh  leaf basil in the herb planter so I pinched some of that and  did a rough chop.  meanwhile I steamed a bit of  brown rice,  and   sauted my   veggies,    added the    cooked rice,  the  beef and its  cooked down stock,  then  tossed in the  cut basil,  stirred it all  up  while the basil  only  wilted,,,,, and served it up in a bow with  some steamed broccoli....  This was  so  tasty... the  tender morsels of  lean braised beef, the  rice  with its nutty  flavor, the  fresh basil that  brightened everything  up,   and the  savory goodness of the    reduced stock and  the bite of the sauted  veggies made for  the complete deliciousness of the dish!!!!   Lynn  said he's  gladly eat it again and again!

You Asked for It!

Today I am joining   this fun blog party  to  take the opportunity to share about some thing  many expressed interest in....this week I posted  my Morning Tea Party  where  I served baked eggs....    So  I  have been  doing some research and  want to share about  this very simple and delicious  manner of cooking eggs....
I am a fan of Ina Garten, and love her  simple yet wholesome cooking techniques.. many of which were born from her  experiences  in France... I have seen her bake eggs several times on her show... so this week I  very simply   Pammed my baking dish and    baked unbroken eggs into it and  seasoned them lightly and baked them a t 400  for about 15 minutes...SO simple and they were delightful...   but then this morning  after  so much interest expressed I decided to do a bit of research....  the most charming video of Ina  baking  herbed eggs is  found here!  So I  made my  facimile of these for breakfast this morning.. but I used  the items I had on hand..
I had no  green herbs   but did have  fresh garlic,  red pepper and  lovely grated parmesan...

 I used half and half  and a bit of butter  to coat the bottom of my baking dish that I also  sprayed with  Pam....  ...

After assembling the ingredients. I  baked  at 400 for 15 minutes  until the whites were completely cooked...

Cooking the cream and butter together for 5 minutes before  assembling the rest  made for a much moister and    light  egg dish than just baking them  in a Pammed  pan as I did  earlier this week.

 The whites a re done the yolk is  not too hard.. just the way I  like my egg,  the egg comes out of the dish easily and clean up is a whiz...    I like to experiment with  recipes.. as I   assembled the dish  I was thinking  it was so much like a crustless quiche and I love a dash of nutmeg in my quiche so I couldnt help  by add a dash  along with the other seasoning...  Next time I will substitute onions for the garlic...
